Been wanting to create healthy High Protein Fat Burning recipes for treats for a while now as I LOVE sweets/baked goods!This is my first confirmed yummy recipe. The key with this though is the fat burning properties of unrefined virgin coconut oil and the high proteins in the Greek yogurt , plain unflavored whey isolate and sprouted grain flours! The stats per muffin below are based on these particular ingredients. Coconut/Palm sugar is also lower glycemic than regular sugar. I can’t do Stevia- it takes sickly to me! :)The average muffin you buy is twice the calories, sugar and fat and one of these will definitely satisfy!

High Protein Fat Burning Banana Chocolate Chip Muffins
1/2 cup organic coconut palm sugar
1/3 cup unrefined organic virgin coconut oil (ideally room temp not melted-more like butter)
2 eggs 
2 cups mashed ripe bananas (4 medium) 
1/2 cup high protein Greek yogurt
1 cup ‘sprouted’ organic whole spelt flour (can find at Whole Foods etc..)
½ cup pure organic oat flour
60 grams ‘unflavoured’ protein powder (works out to approx 200 cc)
1 teaspoons baking soda 
1/2 teaspoon Himalayan sea salt 
1/4 teaspoon baking powder 
1/3 cup chocolate chips ( can substitute nuts if preferred)
Heat oven to 350 degrees.. 
Mix sugar and coconut oil until blended. Add in the eggs, one at a time, blending well after each one(ideally use a mixer, mix will be odd consistency but its fine don’t worry about it). Add the mashed bananas and yogurt; then after that is blended, add in the rest of the ingredients (except chocolate chips) until everything is moistened. Stir in chips, then pour into the individual muffin pan (12) 
Bake until toothpick or a knife inserted comes out clean, about 20 min max- don’t over bake so they will stay nice and moist! Let them cool for about five minutes. Makes 12.(can also bake as cake in 8x8 baking dish but for 45-50 min)
Nutritional info per muffin- Each Muffin: 240 calories, 10 grams protein!!, 14 grams sugar 3.3 grams fiber, 33 grams carbs, 9 grams fat (but fat that doesn’t make you fat!)
